It is now mid February and the time for harvesting and eating ramps is getting very close. I would guess six weeks away if the snow melts off quickly. In the meantime, we are still shipping out ramp bulbs. I dug a box full them earlier this week, and have they are ready to go. If you are waiting to buy bulbs, now would be the time to do it as I don’t know if I will be digging any more (bulbs) in the next few weeks. However, I do have a bunch on hand right now that I need to ship out.

Due to the ridiculously warm weather we have had this month, the ramp bulbs have began to grow. Now is the perfect time to get yours and get them planted before the ground freezes (if it freezes where you live), or get them planted and watch them start growing if you live in a warmer climate.

If you have ramps in your area and want to dig them yourself, please remember a few key points in harvesting in a sustainable matter.
While many argue over what constitutes a healthy ramp population in a forest patch, I think it is best to harvest conservatively. Studies show that only 5 to 10 percent of the ramps in a patch should be harvested each year to ensure their future survival. When I harvest ramps, I do the following:
Taking these precautions guarantees that harvesting is done in a sustainable manner.

The picture you see below is the current size of the ramp plants. This size (average) is what we will be shipping out during the week of 4-6-15. Most local folk prefer them this size, but a lot of culinary folks prefer the larger leafier ramps. If you want big leafy ramps, check back next weekend for a new photo and you can see if they are large enough for you. If you want the smaller ones (as shown below) please order now and your ramps will be shipped out the week of 4-6. If you want larger ones, please wait another week or two before you place your order.
