Because I got a late start this year, and since the ramps have shot up incredibly fast with all this warm weather, this means that this weekend is very likely the last chance to grab fresh ramps before the season ends.

These are still beautiful, pungent, and full of that classic wild leek flavor. Hand-foraged right here in the mountains of southeastern West Virginia. But once they start flowering and the leaves get too big, the prime harvest window closes quickly.
